I'm currently looking at the North Face Router Backpack. It's a bit expensive, but it seems to fit my needs.

I'm basically looking for a bag in which it can carry about a day or two's worth of supplies. This way I can just leave the suitcase in the hotel. I don't really want a big bag. 41L is about as big as I'm willing to go. Maybe 45L if there are any available. I just want to store two cameras, 1 tablet, maybe 1 ultrabook (MacBook Air), a towel, pair of pants, t-shirt, and undershirt. The bag should be lightweight, reasonably decent looking, and can be used as a carry-on in a plane.
Any suggestions?

No. How do they compare to companies like North Face?

I use primarily North Face backpacks which are very good but I think Osprey makes much better packs. I'd highly recommend that you check out some Ospreys.

Tom Bihn has outstanding build quality and is rugged so will last for a long time and is usually only a small premium over the more mainstream companies like North Face.
That said, the choice of backpacks TB offers is smaller than the competition with the largest in terms of volume, called the Brain Bag, being 36L so that may play a role in your decision.
I have an Osprey day pack that I use everyday for work. It's smaller then what you are looking for but I've been very happy with it. I've also owned North Face packs, my last one stuck around for about 10 years.
I don't have any Tom Bihn gear but from what others say, their stuff is outstanding.

We got our oldest son a Smart Alec http://www.tombihn.com/page/001/PROD/100/TB0103 a couple of years ago. He was carrying a laptop to school, and we wanted to protect it with a Brain Cell. The bag still looks like new after two years of abuse. The laptop has held up well too.

I can't pull up the direct link, maybe because I am currently in Europe. Even google results that seem to be direct bring me back to the NF HP on which I then cannot find the Router backpack.
Anyways... do you want a backpack or is a messenger alright, too? What kind of cameras do you want to take?
I do recommend looking at the Tenba Messenger bags. Plenty of satisfied FT'ers have followed this recommendation by the way. :)
Do an FT search and see what I and others write about it. Also look at the video on the Tenba site.
For what you want to do I would use the small satchel. The mini will be too small. The large satchel might be an option if the cameras are big or your clothes are bulky.

45L?
From what you listed it sounds like you want something more in the 20L range. Actually what you listed can probably fit in 5-10L.
Have a look on 5.11 covrt 18
Lots of pockets to organize everything

I like Tom Bihn too (I have a bag I use for a daily commute on public transportation and it's held up great). The brain bag is quite big-- fully packed it might not even fit under a seat-- but Bihn also sells a camera case insert for it which you might find helpful.

Check out the Outdoor Products Daypacks...extremely well made and affordable. They compare to North Face in my opinion....

Do you plan to do any trail day hiking with the bag or is just a carry-on for short trips and you are looking for the backpack carrying option?
If the latter I recommend the Rick Steves (http://travelstore.ricksteves.com/catalog/index.cfm?fuseaction=catalog&parent_id=8) Convertible Carry-On (99.99) or the Classic Back Door bag (79.99). The bags are 40L, light weight, durable, designed to meet carry on dimensions, has external cinch straps to compress to your load volume, and of a good quality. The bag folds flat and I always have one in my checked bag just in case my checked is overweight.
