Would like to try LY when I plan my Israel visit this Sep or someother time when I go to India. When is it offpeak in Israel and which destinations have decent award availability?
award availability isnt really an issue usually on any route.
In terms of off peak...I would say, November, Jan thru March, and May. After that its summer,students,and holidays till around November.

I've had trouble getting business class awards to LAX a few times, but mostly in the summer it seems more difficult.

F has near perfect availability everywhere, but can only be booked via LY matmid points.
J, besides BRU, MAD, WAW etc, the best avail is to/from HKG.
If you're goal is simply to get to/from the East to Israel, Korean has J/F service 3*/wk from ICN, and it may be shorter on TK via IST as they can fly over countries LY has to circumvent.
