Travel with Children - Sun Destination with Toddler & Pre-Schooler?

My wife and I are beginning to think about a trip in February to a sun / beach destination with our kids. I know there are a zillion sites on the internet to seek recommendations, but I thought I'd start here. Here are the particulars -

- Next February our boy will be 2.4 years old, our girl will be 4.8 years old.
- Looking for a family-friendly all-inclusive, including 'beverages'
- Mexico, Caribbean or Central America
- Somewhere with programs to entertain our kids so Mum & Dad can have a holiday too
- We don't want to cook, but unit with fridge would be useful
- I'm Star Alliance Gold, so ideally somewhere we can reach on a *A carrier with only one connection. We're located in Vancouver, Canada.

Look at the Beaches all-inclusive. Many in the Caribbean. They cater to families and often have kid friendly themes.
