Since the local currency in Brussels is euro.... you can be pretty sure they will accept those.

Normally stores in airports accept the major currencies.... but don't expect to get a good exchange rate.

Euros – yes, of course; the local currency is euros, after all.
Some shops at the airport might accept US dollars, and other non-local currencies too, but I don't know for sure – and the exchange rate would be sure to be poor. It would be be better to pay in cash in euros or by credit card (also in euros, if the question arises).
