I have a 2-hr connection in ICN from United to Asiana. Is this enough time to have lunch in ICN? Or only enough time to run from gate to gate?

you should be fine. you will have to go from 1 terminal to the main terminal though but it doesn't take long usually

Since ICN is one of the most efficiently run airports in the world, I think you'll have time for a quick lunch (I doubt that you'll need it - most carriers serve 2 meals out of N. America). I believe your transit includes a security check.
