My girlfriend is still in university, graduates in August. I'm thinking it would be better for her to wait until she has an income to try to apply for the Southwest Visa, because I've heard that they require good credit, and she has none at this point. Would it be best to wait or try to capitalize on the 50,000 point offer now, at the risk of being denied?

If she has no income and no credit history, it's better to wait until she graduates in August and has a job.

She could get a Freedom (easier approval) and start to build a relationship with Chase. It'll remain useful in the future if she ever gets the SP card and has no annual fee, so no downside.
If possible, perhaps have her charge a good amount and pay it several times per month if they give her a low credit limit. That will help show Chase that she's worthy of more credit and is a profitable customer.
