Religious Travelers - Why KSMLs often have Salmon as the fish content....

I think there are a number of factors:


Salmon is recognised world-wide - whereas fish like Flounder / Haddock / Tilapia are more regional. And we all know that Jewish people like to stick with foods that they know and recognise - nothing out of the ordinary....

Salmon reheats quite well, due to its relatively high fat content, whereas flaky fish like Cod / Halibut might be inclined to dry out when overheated (it does happen....).

It doesn't smell too bad when heated and served.


Hermolis does provide Fillets of Sole (stuffed with Salmon) on BA in J/F class ex Asia (HKG / BKK / SIN) and I think Borensteins also uses Sole.

Hermolis also does a three-colour terrine with Salmon / Haddock / Smoked Haddock for AA ex-LHR, and also grilled tuna (cold starter).

Also, most KSMLs tend to have a Meaty main course, with a Gefilte Fish or Salmon starter. Hermolis also uses smoked Halibut and Mackerel but many people I've spoken to don't like it, or just don't know what it is, so they leave it (especially the Americans and non-UK "Heimische welt").

I've had a really nice bit of Schmaltz Herring for breakfast on CX ex HKG (to LAX) - also Hermolis.

I think you'll find that the non-kosher meals use seafood / shellfish or salmon in the majority of cases where fish is used, and as the first option isn't available to us, that leaves the second.

I wish someone would cater thursday night flights to Israel with Chulent and Kugel.
And none of that Polish chulent with potatoes in it, a nice Hungarian chulent with a nice bit of flanken and good "thick" potatoe kugel.
Maybe it's becasue I'm a chassidisha yid (Sanz-Klausenburg for those interested) but I think it would be a good idea. LOL.
Just like those nights travelling to BP and willy or Monsey/KJ with Heiman's bus :D:D:D

Typical Oberlander! Do what you want on your own aircraft - if on my Litvish / Yekkish one then make sure you're in a different air conditioning zone ;)

BTW, have you had the Chulent at a restaurant called Tzimmes in Herzliyah Pituach? Definitely my fave....!

I thought the choice of salmon was economics, more than anything. Also white fish fillets like flounders do dry out when reheated.

As for the suggestion to serve cholent in-flight, you guys really need to think about its effect on digestive system, loo/passenger ratio...
