My wife and I will be staying at the Hilton Sorrento Palace. What are the must do or see items in the area? As we will be driving we will have a car if that makes a difference? Any tours or guides you would recommend? Any thoughts on Amalfi area? I know we are trying to see a great deal in short time.

My top 3 would be:
Trip to Pompeii - take the train, walk around Sorrento in the afternoon
Drive the Amalfi coast and have lunch in Ravello
Take the ferry to Capri
We did not have time to take the ferry to Capri, but my Grandfather always insisted that it was the most beautiful place on earth.

+1
Make sure to visit the town of Amalfi itself. I wouldn't recommend driving the coast, as the views are incredible and you'll want to enjoy them. You can then take the bus up to Ravello for lunch. If do, please visit Villa Cimbrone. I promise you some of the best views of your life.

I agree with KathinJax, with only two days, that will be all you can fit in. We just returned Sunday from a 5 day stay in Sorrento.
I imagine the Hilton can give you all the info you need as far as Excursions, bus schedules, etc. If not, there is a Tourist Info office at the Foreigners Club in Sorrento.
The ruins at Pompeii close if it rains. Its a 40 minute, 2.10 Euro ride on the Circumvesuviana Train.
We took the Sita Bus to Amalfi but you can stop at those small turnouts along the way in your car. The driver won't see much as its a two handed, both eyes on the road drive.
If I go again I think I'll take the ferry from Sorrento to Amalfi to really get a good view.
We did not go to Capri.
Get on Trip Advisor, go to Europe-Italy-Sorrento posts and you can get an idea of what others are doing.

We stayed at Hilton Sorrento Palace 4 years ago and going back in September. You can arrange a private car/driver for a day going to Positano, Amalfi, Revello. stopping in each town to enjoy shopping, lunch etc., Also several stops along the way to take pictures. It was very reasonable and worth every dollar. Picks you up and drops you off at hotel. I would echo the post to check out the Sorrento Forum on TA. There is a wealth of information regarding bus and boat options.
We also took a tour to Pompei for the day, arranged directly with hotel. Went to Capri on our own. Relatively easy walk to marina and boats run several times a day. You will really enjoy the hotel and leisurely afternoons in town to shop and drink. Enjoy.
