I will be driving from Monterey to Fresno (clovis), and I'm wondering which road to use? Are there any scenic routes? How long would it take?

Just take Highway 1 north along the bay to 156 at Castroville, then east to 152 near Los Banos and continue east to US 99. South on 99 to Fresno. There are one or two "scenic" alternatives but I wouldn't recommend any for a first-timer. Old Panoche Road is not a very efficient way over the mountains. :p Figure about 3 hours.

Where in Clovis? For the north side, I'd say take Herndon Avenue from 99 east to Clovis. For the southern part, it might be faster to stay on 99 to 180 east and then merge onto 168 to Clovis. YMMV. Either will get you here.

That's a good and simple way. SR152 is a bit slow through Los Banos, however, so another alternative is to take I5 south from SR152 and then head across the central valley on one of the other roads, like Panoche Road/SR 180. These are posted for 55 but once in a while, people have been known to go just a bit faster....
