Why doesn't ANA service Sydney? I imagine there would be a relatively high demand for this route...?
It used to. The problem with SYD is that while it has fairly high tourist demand (evident from the Y sections of JL and QF packed with Japanese school groups), it has relatively low business demand. That being said, I think SYD would be a prime route to be operated by a 787.

If NH really want to fly to SYD, they could have used 763 long time ago, given NH had tons of 763 available, don't even need 787 at all since C loads will be light.
763 can certainly do NRT-SYD, as even NZ had used 763 on the longer NRT-AKL before it switched to 772.

I'm not an expert, but maybe the lower operating costs of the 787 would justify the route, while those of the 763 would not. I guess time will tell!
