Is 1h25 enough for a connectiong (first flight from SFO lands at 6am, 2nd flight, to PNH depart at 7:25am)...
Will my cheked luggage make it? I have no experience connecting at TPE, so I have no clue how they are generally... I would not have any worries if connecting at HKG, SIN or ICN, but have never flown through TPE...
There is an EVA Air flight from TPE to PNH at 9AM, so would China Airlines put me on that flight should I miss the connection?

It should be fine as long as your flight leaving SFO is not delayed by more than 30 minutes. Generally your luggage will go through with you.
They will not put you on EVA flight unless you fight/request with them.

It's a tight connection but I'm willing to say that you will likely make it. They'll do their best to make sure you make your connection (after all they allowed you to book the ticket) and the captain will actually wait for you (yes you) if he is told that several people are trying to make their connections to PNH.
Just hope your flight doesn't get delayed. That's about the only thing that may keep you from making your flight. SFO flights on CI arrive in T2 but I believe intra-Asia flights depart from T1 so make sure you get on the bus or train quickly to make your connection.
