France - great restaurant experiences in Paris

I've been in Paris roughly 50% for going on 8mths now, and have gotten to know my way around the city, have found a few great places. I've not seen any thread here in "Travel&Dining" on great restos, so thought I'd start one
(note -moderators: if there is such a thread, please blend this into it)

This shall be a shameless plug for one of my favs: Paul Chene restaurant.

This has been a fantastic place for meals and occasions, and I've even stopped by just to have a drink and a chat.
I highly recommend for a particular type of traveler: one not seeking a budget meal, but rather a memorable Parisian dining experience

I will be in Paris with a friend for one day this coming Saturday, taking the Eurostar from London early in the morning and returning later in the evening.
We'll have time for lunch, and that's about it.
I'm looking for good food and decent wine, moderate price, and perhaps off the tourist path. We don't need (nor can we afford) the ultimate food experience given our travel logistics for the day.
We've both spent considerable time in Paris in the past (albeit many years ago), so we can get around fairly easily.

Any recommendations?
