I want to try making souffles. Hopefully one sweet and one savory.

Oh and eat them too.

And maybe find experimental ways to cook salmon.

Cheese. More specifically, a cheese board with a mix of sharp chedder, some red leicester, double glouster, shropshire blue, a gooey brie, and some creamy goats cheese, fresh baguette, and some rich creamy butter.

Homemade Hot Open Faced Turkey Sandwiches.

Two slices of Italian bread, lightly toasted
Covered totally in mashed potatoes
Thick layer of turkey
Gravy so I can't see any of the below
Three minutes in the microwave.

Consume, enjoy, instantly regret :D

A full-on roast dinner, I suspect, but we're lucky enough to have some excellent farmland around here, so can get a number of ingredients (not least a nice, free-range bird!) direct from farms or growers.

I seem to also end up making my own bread at Christmas, including bagels for breakfast. Again, there's a good mill nearby, whose strong flour produces outstanding bread.

Christmas dinner menus? One of my favorite subjects!

Oyster tartlets
Relish tray
Champagne Holiday Punch
Apple-Riesling Smoked Ham
Pumpkin Lasagna with Ricotta and Swiss Chard
Tamales
Balsamic Cippoline with Pomegranate
Yukon Gold Potatoes Au Gratin with wild mushrooms
Haricots verts with walnuts & dried cherry vinaigrette
Cranberry sauce with port wine and cinnamon
Herb Gruyere Biscuits
Italian Trifle with Marsala Syrup
Salted Caramel and Chocolate Pie

All from scratch, except the tamales. (They're a family tradition for the cousin who won't eat turkey or seafood).

I was at the Las Vegas Hilton for Christmas so on Christmas day I consumed:

Crab legs, smoked salmon, eggs benedict, steak, pancakes, french toast, bacon, yogurt and fruit all before 10 AM! :D

Completely off topic, but I was there a few weeks prior for a conference, yuck. Not surprised Hilton will be taking their name off this place.
On the other hand, I have heard they're buffet is pretty decadent!

Sometimes life *happens*. For those times, it's nice to fall back on filet in the freezer and The Fresh Market for everything else! I'm saving the lobster mac for our next trip to Hawaii. Really, the recipe could use an extra set of hands and a Mai Tai. In the future, I will always have steaks in the freezer, just in case. If you decide to give the recipe a try, please post how it turned out!
