We got a cirkustalt (tent) at IKEA for the grandchildren. It measures 21"x21"x3" but is not bendable. Looks somewhat fragile.
Will this fit in an overhead bin? Could it be gate checked if not?

overhead bin measurements are 16" in depth, 10" in height, 24" in length.

It will fit in the bin on the 700's, but it is in excess of the enforceable allowable limit in one dimension. You may be stopped at the gate. It will not fit the 500's as the bins are not as deep. I can not for the life of me remember about the 300's but someone here will know. See this short thread. At 21x21x3, if you can get it past the OA, and you are not on a 500, you can fit it in the bottom of the bin, but expect people to pile things on top of it.
There is no gate check on WN where you get it back at your destination gate except for mobility devices and strollers. If they require you to check it, it will be put in the hold and checked through to your destination with regular luggage.
If you really have to take it, get a box that is larger by an inch or two on every side, put it in the box and pad with wadded newspaper (cheap and less safe) or bubble wrap (expensive and safe) and check it as luggage. Remember, free bags up to two per person on WN. This may be the time it pays off.
