Hong Kong and Macau - Fun, cultural experiences for kids

What are some activities, sights, and eats for kids to get a sense of place of Hong Kong? I'm not so much looking for museums/tours/visitor hotspots, but a fun way to foster curiosity and help children understand the culture and essence of the city. I'm also interested in hikes or visiting island villages for a taste of "Old Hong Kong" and would love some suggestions.

So far, Tai O fishing village, Kadoorie Farm, Chi Lin nunnery, Kowloon City settlements, and Temple Street have turned up in my research. I'd really appreciate opinions on the value of taking kids to these places too.

A tram ride is a cheap and fun way to see Hong Kong.
Tai O and Chi Lin are packed with Tourists.
Mai Po nature reserve is a good place to see birds (they have migrating birds resting there every year).
Kadoorie Farm is very nice too, but if you are from the West it's not that special. It's really far away unless you have a car I don't think it's so accessible.
I'm going to take mine (grow up in Swedish, half Hong Kong and western), and my plans are to take them to see museums and ocean park (the 'zoo' of Hong Kong). They are under 6.
