Title says it: Will the honour the benefits if I book and add e.g. my girlfriend as an additional guest while I won't be staying there ?

They should, if the room is indeed booked on your name.

every IC is different, usually yes this applies to all levels of status.

They may do, but there is no entitlement for the Ambassador benefits if the member is not staying

Officially no, but as posted by other, there is a high chance that the hotel honors Ambassador benefits if you put the other guest name in the reservation.
