Grand Traverse county in Michigan -- no tubing or fast rivers but a great area to visit.

I'll throw my two cents in for southern Indiana (don't be discouraged if you've only seen the flat areas of the state).

Brown County State Park in Nashville has great camping, trails, mountain biking, etc. It's located in the middle of some of the states best little wineries and the city of Nashville has a mini-Pigon Forge or Gatlinburg feel to it (emphasis on mini)

There is slow river tubing/canoeing available at Turkey Run state park to the west, on the White River to the north as well as some other areas to the south.

I'd say start by checking out the this link (http://www.indianawines.org/wineries/?loc=map)and go from there and go from there. Of course you can PM me if you have any other questions.

The Niagara region of Ontario also has a good number of wineries to be explored. There may be some tubing options on the Niagara river too.

Grand Traverse county in Michigan -- no tubing .... there is tubing & kayaking rental on the Boardman River. Another highlight IMO of the Grand Traverse area is to go to Sleeping Bear Dunes National Lakeshore park: http://wikitravel.org/en/Sleeping_Bear_Dunes_National_Lakeshore

A nice feature about western Mich is that it is on the far western edge of a time zone so one gets plenty of daylight during the summer hours. Plus sitting on a beach (of which W Mich has plenty of) on a warm summer night and watching the sunset over Lake Michigan is heaven.

I've camped a bunch of times in Brown County State Park in Southern IN, a great park as msko06 states. we've never been to Turkey Run but have always wanted to.

The best wineries in the midwest as DavidDTW mentions is the Niagara region.

Have fun, sounds like a great trip.
