A Choice property I need in MN shows no availability for one night on a Saturday in July, but there's plenty of availability if two nights are booked.
So, I book the two nights, and then immediately change the reservation to just the night I need. This worked just fine.
BTW, throughout, there was never any mention that there is a 2-night minimum.
