If I've already booked a ticket, at the 20,000 mile level, for January travel into SFO -- can I do anything to recoup those extra 5000 miles? Would I need to pay the re-deposit fee and then re-issue the ticket?

This has happened to me before. Call the DM Service Center and they will credit the mile difference after you take the trip. That, of course, assumes they'll be around then.
