I will be staying one night in Singapore and two nights in Hong Kong at the Mandarin Oriental. I'd love to find quality restaurants in each city-----I love all kinds of food------any suggestions?

What do you consider quality? Fine dining? Or excellent street food?

Just wondering if you are coming on the 13-15th of feb as there are lots of restaurants closed due to chinese new year.
As i have never been to hong kong i can only say for singapore.
I have put together a list of restaurants for your preference according to the type of cuisine in singapore.

~Crystal Jade Palace, Ngee Ann City level 4 opp coca restaurant *****
~Jade Palace, Forum Shopping Centre, level B1 *****
~Wah Lok Restaurant, Carlton Hotel, level 2 *****
~The Cathay Restaurant, The cathay at Handy Road, level 2 ****

~Jumbo Seafood (east coast) *****
~Long Beach Seafood (main), Recreational club east coast *****
