I will be staying one night in Singapore and two nights in Hong Kong at the Mandarin Oriental. I'd love to find quality restaurants in each city-----I love all kinds of food------any suggestions?

What do you consider quality? Fine dining? Or excellent street food?

There is a Michelin Guide to Hong Kong & Macau, if you like that sort of thing.
