Haven't been on Virgin's UC in a while and can't remember how the food selection is... My wife's a vegetarian but she eats fish and dairy. Is there generally options on the existing menu and good availability of choices?
I find that if we order the "vegetarian" meal it tends to be something more for someone on a diet and is even worse quality then the meals on the menus.

You couldnt have picked a worse carrier to fly with when food on board is important for you. VS will serve you up some slops on china..just wait for their breakfast. It doesnt even pass as a 3rd rate carriers Y standard. Good luck and let us know if the offerings on board have matured any?

CJ may well be right that VS food in Upper Class is not of the standard of SQ or some other Far East carriers ... however from the reply I'm not certain you're familiar with or have tried UC food recently, it's perfectly 'all right'?
For the OP, in UC the menu usually consists of two starter options, three mains, cheese and two puddings plus a selection of smaller bites (including sandwiches so further vegetarian options there). For main meals: starters have a vegetarian option (currently on full service flights a rather nice tomato and basil soup with the other option being a smoked salmon salad - on US to UK flights), mains normally feature a chicken / meat dish or a fish dish or a vegetarian dish. For example, flying back from LAX on Sunday the main options included something chicken, sole stuffed with crab in a lobster sauce with rice and a vegetarian pasta dish.
On my recent flights I have always had a choice. If you are concerned, ask a cabin crew member to set something aside for you, they will oblige. I agree too, the special menus leave a lot to be desired so go for the regular menu and if you have any questions about current offerings or ingredients, if you fly UC, call the premier service team.
For breakfast I'm less clear because I'll take it in arrivals or at home, but usually there are plenty of cereal, fruit and other options as well as bacon rolls and a full English (just not the latter for your wife!).
Food may not be the best thing about VS UC, but it's not so terrible as to make you want to fly elsewhere!
