Let's just say that 364 random people walk onto the plane, and each has a different birthday. Does that mean that the 365th person's b-day MUST be on the remaining day? Of course not! It's like rolling dice. You have a 1 in 6 chance of rolling the number five. The next time you roll, you still have a 1 in six chance. No; the probability of any given person sharing your birthday is the intuitive 1/365 answer. In Taiwan they even have a cake in the room for me if it falls within a couple of days of my stay. NH do go by the book for everything, even at the airport checkin, one cannot just release exit row or bulkhead that easy just for anyone, most of the time they actually have to call their manager or suprvisor, and say the reason for the release of those seats, like NH elite, *S, or *G.
