Considering a booking to CDG on AF...The fare class is not one that is listed on the AS website as one that is ineligible for Mileage Plan mileage accrual, but at the bottom of the booking it says that I could earn a whopping 3750 miles on this 10000+ mile journey if I joined their FF program. Am I missing something? I don't think so, but it strikes me as funny that an airline would give more mileage to a partner than their own program.

Some AF fare classes only earn 25% of actual miles flown. In my mind flying on AF collecting AS miles is hardly worth it unless you buy some really expensive fare class. Try DL instead. Food may not be as good but you get full mileage credit.
According to the partner details, Air France classes award all or nothing--except of course for premium bonuses which are all and them something.
Mileage Earned: One mile for each mile flown*; 25% bonus for purchased Business Class; 50% for purchased First Class.
To ensure flight credit, the two letter airline code must precede the flight number on your ticket receipt or boarding pass.
For example, AF XXXX, operated by CityJet.
Flights must also be within the eligible flight number range.

When I have looked at AF flights to Europe, the SEA-CDG fare is usually eligible, but the CDG-onward to european points generally is not. Had it actually been the cheapest last time, I'd have sacrificed the 1200 or so miles and taken them.
