I just realized that I am flying from SHA-NRT with ANA and then NRT-LAX with KE. What is the best advice someone can give me regarding my luggage? Should I (or can I) check in all the way through to LAX with ANA even though KE is part of Skyteam? Or should I collect baggage in NRT, and recheck everything in again? Will 1 hour be enough time for this process? Anyone else ever run into a situation like this before with a tight connection? Any help would be GREATLY appreciated.

Basically you can't go through immigration and custom and re-check-in again at NRT... the immigration line can be a 30 minutes wait or more at busy times.
However thankfully, both Star Alliance and Skyteam are using Terminal One, but expect somewhat a walk from one end of the terminal to the other end.
I assume you are on different tickets... but regardless, the agent at SHA should be able to check your bags through to LAX, but you have to make sure printing out all the e-ticket receipts. Yes ANA and Korean are on separate alliance, but have interline arrangement. So they can check your bags through to LAX (but definitely not boarding pass).
Once at NRT, you should immediately head to the transit line and you will need to show the agent your passport, your e-ticket receipt and your baggage claim showing that you and your bags are going onward to LAX on KE.
After going through security, you should proceed immediately to KE gate of your flight and get your boarding pass. Don't bother going to KE transit counter, which is at the No. 2 satellite (gate 21-25), but KE 1 and 2 usually use gate 26 and 27, which are in the central building! Just go directly to the gate!
However, in the future, you should not book an itinerary like this especially in separate tickets. Even in the same ticket, you should allow at least 90-120 minutes connection time especially on flights between different alliances. If you are on an oneworld flight, you won't make the connection.

Yes, I have gone through security at NRT by just showing my checked baggage claim tag.
