While we've driven by several Chipotles, the closest one is about six miles away and we just haven't tried them yet. Have been a fan of Baja Fresh for YEARS and recently started getting tacos at Rubio's for an occasional lunch. Is Chipotle any different? Just a newer fresh fast Mexican restaurant? Thanks :)

Baja Fresh has a wider of range of offerings on their menu. Chipotle is mainly a build-your-own (gigantic) burrito place. You can also get tacos and salads there, but it's known for its customization. You pick out the type of salsa, veggies, meat, beans, rice, etc., that you want in your burrito/taco/salad/whatever.

Chipotle is VERY simple but really really really bad for you..Check out their nutrition counter on the website and just build a typical burrito and see how many calories and all that it has. That being said, it's so delicious. Compared to Rubios, it doesn't have anywhere near the variety that Rubios has and no fish tacos at all. Compared to Baja Fresh, basically same story. IMHO, I rank Chipotle 3rd out of those choices.

Since you're So Cal based, here's a few of my tips for places to try:
Chipotle (http://www.chipotle.com/) is not one of my favorites, some people rave about it. It's under the parent company of McDonald's. I'd rate it at the bottom of my list, everything seems seasoned improperly.
Baja Fresh (http://www.bajafresh.com/jump.jsp?itemID=0&itemType=HOME_PAGE) is good mostly because I like the salsa bar. It's parent company used to be the same as Wendy's. I'd rate it in the middle of my list.
FINS (http://www.fins.net/) is good, but used to be better and they closed many locations. I'd say they have one of the better fish tacos. K-38 is my choice of meal. I'd rate them closer to the top of my list.
Wahoo's (http://www.wahoos.com/) is good, but big on piling on the beans and rice-less, small on the entree. To me everything besides the fish taco is good here. I'd rate it closer to the top of my list as well.
La Salsa (http://www.lasalsa.com/) is very good, but seems to be on the pricey side. Their salsa bar is good and menu selections are decent. I'd rate it near the top of my list.
Taco Mesa (http://www.tacomesa.net/index.html) is excellent. They have creative menu items that taste authentic and the only thing I don't like is they are only in Orange County. Probably #1 on my list, worth the effort to go to this place!! (Plus they serve beer!!)
Rubio's (http://www.rubios.com/) is good, fairly consistent, better are the fish tacos compared to most of the rest of the menu. I'd rate it somewhere above the middle, but below the top of the list.
Sharky's (http://www.sharkys.com/) is my current pick. They serve Organic food and it tastes good (especially the brown rice if you can believe that). Limited locations, but they're fairly new.
Speaking of favorites, there's a place on the web to visit that I like to check now and then for restaurant picks. Give it a try: Chowhound (http://www.chowhound.com/boards/2)

I don't particularly care for Baja Fresh. Maybe it was just the one I ate at, but it was a lot of money for very little food. I'd much prefer eating at Rubio's, where I never felt ripped off!
Miss Fins, though. They were a part of Mileage Plus Dining :)
Wahoo's piles on the cabbage. I'd scoop some of it out so I could taste what I was eating.
Chipotle's good if you're really, really hungry (or not watching weight) as their portions are enormous.

Not to mention that a chipolte burrito will often weigh more than barbell... my colleague brought one back for lunch that felt like 2 lbs.
I would say Chipolte is great for a family, because 1 item on the menu would feed 4.

What do you put in it?? :)
The tortilla itself is well over 300 calories (I was too scared to check the carb and sodium count). For a company that touts the happiness of its sourced meat, and the healthy benefits of free-range/drug free animals, one would expect they might invest some cash into developing tasty low-cal/low-carb tortillas, or at least offer them as an option. I can buy such items at the supermarket, so I know they exist...

Wow, I'm a little surprised at those calorie counts without meat, cheese or sour cream. Guacamole can be a calorie killer...I'm also surprised those tortillas have that much calories. One way to shave calories at Subway is to switch from bread to the tortilla wrap, which makes me wonder why the Chipotle tortillas have so many calories.
I've only eaten once at a Chipotle and thought it was okay. Liked that you could customize it, though I remember it being kind of a large portion. I probably liked Baja Fresh better, and I think both are a significant step forward over Taco Bell.

I personally love chipotle, it always depends on what you like as well. Chipotle does a great job with something simple and if you want lo cal, do something atkins-eque with it and strip out the tortilla and rice. As others have said, the big obvious difference between Chipotle and Baja fresh is a much narrower menu at Chipotle.
That said, I find the quality of the food at Chipotle to be head and shoulders above the bland, greasy fare at my local Baja Fresh. The soft tacos aren't very authentic, but the steak is good quality (if a bit over-spiced) and the chicken is really good.
Portion sizes are too large at both, and a down side with tacos is they don't keep very well - burritos don't get soggy in the same way, and my wife generally gets two meals out of her burrito there.

Chipotle is amazing. Best fast food place on the market. Second only to In n out.
The typical burrito I get goes out at a whopping 1183 calories and that's not including the cup and a half of soda that I get with it, or the extra sour cream I ask for, or the extra rice. So more like 1700 calories for the whole thing. But it doesn't matter, it's probably the best food for the money I can get as a poor college student (without resorting to McDonalds :( )

Short of that, I'd take Chipotle over Baja Fresh. I think the ingredients are better and more flavorful. Plus if you do a "burrito bol" with no rice, can avoid all the tortilla/rice calories.

In fairness, "fusion" or "pan-Asian" isn't pretending to be something specific... it's borrowing from other things to create it's own genre.
That said, in general I have some sympathy for complaints about authenticity when it comes to "truth in advertising" - as an expatriate NYer, while I like quite a variety of styles of pizza, it always bugs me to see people claim that pizzas are "NY style" or "NY pizza" when they're about as much NY style as Pizza Hut's pan pizza is "Chicago Style."
As for Mexican, while local places are often much better than chains, what you're likely to find around here in California Mexican which is pretty much a distinct style in itself rather than being an authentic match for any particular regional Mexican cuisine.

The Burrito's I miss were at the local places in SD. I can't remember the name of the one behind Jack in the box in Mission Beach, but the memories....aaaahh[/QUOTE]
Was it an Alberto's, Aliberto's or Roberto's. I loved those places. I figured they had to be named after brothers as the food was pretty much the same. La Posta in San Diego still rules.

FINALLY tried Chipotle today! Took note of the warnings that the burritos were huge and we shared one. We thought our burrito was huge & tasty. Will try it again sometime. Next time will try one with little or no rice -- that made up allot of our burrito.

I guess I believe in "truth in advertising". Don't call it "Mexican" if it's not authentic. They can call it something else. Unhealthy and disgusting would be a start in my book.
Oh don't be such a snob - nothing to do with "truth in advertsing". Chipotle sells Burritos and Tacos; what is that if not Mexican ? Sure, they ain't "aunthentic" Mexican Burritos or Tacos. But they don't claim to be authentic.
Pizza Hut pizza isn't "authentic" - so by your reasoning it shouldn't call itself a pizza resteraunt.

California-welcome to the home of the burrito
I've gone to Chipotle in California.
Me too...but not because I thought it was Mexican food. Appreciate Chipotle for what it is, not for its Mexican credentials, or lack of them.

IMO-
Chipotle is owned by McD's and is horrible.
Baja Fresh is owned by Wendy's and is also horrible.
OP, stick w/ Rubio's, it's the best chain FF mex you'll find (second maybe to Alberto's/Roberto's etc)

Chipotle is its own publicly traded company now. I believe the ticker name is CMG.
