How easy/difficult would the journey be from JFK to the Celebrity cruise terminal be? Cost of cab or bus? Length of journey and time?

Can you fly into EWR instead? From EWR it's a relatively easy and inexpensive cab ride.
From JFK, a taxi or car service will probably cost well over $100.
You can get 90% of the way there by public transportation, but I don't know if I'd recommend it. You would first need to get to the Port Authority Bus Terminal in Manhattan, which is easily reached either via either the New York Airport Service bus or AirTrain/subway (see our wiki (http://flyerguide.com/wiki/index.php/NYC_Airports_to_Manhattan_Transportation_FAQ) for details on these public transit options). Then you'd follow the "by bus" directions on this web page (which, note, involve calling a cab for the last leg):

Mass tranist would be fine but how much luggage do you have? The buses have limited luggage space and the subway transit cops frown on luggage taking up space for passangers (the passengers are even worse!)
You might want to go with one of these car services. They should have done enough jobs at the Cape to know how to get there.
Depending on the time of day a ride JFK to Cape Liberty could take at least 90minutes, as long as two hours. IT's NY traffic of course.
When I took my two cruises I was very concerned of flight delays and car services not showing up. I flew in the NIGHT BEFORE and got a chance to explore Vancouver (both cruises were for ALaska and LOVED them!) Maybe if you can to fly in th enight before and then take your cab to Bayonne.
You don't want to "miss the boat!" ;)

Thanks for your comments themicah and Catman, I will contact my travel agent and ask if its possible to fly into EWR.
Would you recommend staying at Candlewoodd Suites, New Jersey?

If you can take the bus or train to Port Authority, or 33rd st or WTC stop and hop on to Path train to Journal Square.. If you want to take a bus take the 125 or 99S from Port Authority, both stop at Journal Square but 99S continues on to Bayonne.. If you take the 125 you need to change buses at Journal Square and catch the number 10 bus from Jersey City to Bayonne.. From Bayonne just grab a cab..

I have not stayed at the Candlewood Suites but it is convenient to the Path trains to NYC and to Newark Airport (for the airport it's a train change at Journal Square... nothign that difficult.)
You also may want to try to get a hotel at Newark Airport and arrange a Car service from there to Cape LIberty.

Thanks everyone.
Travel agent suggests 2 hotels near Newark airport, Comfort Suites and Doubletree. We are considering staying for three nights before the cruise.
The Comfort Suites is the cheaper option but it has mixed reviews.
Choosing to fly to Newark was the best idea, so thanks again for that.

If you can I would go with the Doubletree. Comfort Suites generally get mixed reviews all around.
If you can you can also try the hotels in Jersey City. There is a Doubletree there too, a Courtyard by Marriott and a Hyatt and Candlewood suites.
