Are there any low cost carriers between New York City and Las Vegas?
I found flights with NWA and United for around 258 USD but I would like to have a round trip for around 100 USD max.
The ideal dates would be:
Leaving EWR on Dec 16th in the late eveing (8 PM or later)
Arriving in EWR on Dec 21 around noon
However, I could also fly out of any other NYC airport on Dec 17 and be back in NYC on Dec 21 around noon (or better morning).

www.jetblue.com non-stop from JFK to LAS
www.spiritair.com LGA-DTW-LAS
But I gotta be honest with you, $100 roundtrip is pushing it.

I think the OP is confused. "Low cost carriers" operate with lower costs (in theory) and have slightly different fare structures compared with the legacy airlines. But they generally charge passengers the same as the legacy carriers on a given route. I don't think I've ever seen a $100 roundtrip fare on NYC-LAS, although occasionally there will be fare wars that push things down closer to $150. In my opinion, anything under $300 is reasonable--particularly if you're going to LAS on a Friday or returning on a Sunday.
Almost all the LCCs fly NYC-LAS--except WN, which doesn't serve NYC. You can fly B6 nonstop from JFK, HP nonstop from EWR or JFK, F9 via DEN, FL via ATL, NK via DTW, TZ via MDW, etc.
But there's really no advantage to taking a LCC over a legacy. In fact, for your dates and times the cheapest thing I see are the CO nonstops.

Actually you can get <$100 roundtrip. UA in January is $92 plus tax. Ted? Yeah that's a low cost carrier! :D

You've got it almost right themicah ;)
When LCCs started, they indeed had low prices ^
What happened, is that most of the legacies started to match, or come close to matching LCC's prices. Over the years LCCs raised their prices, and these days often cost more than your "full service" carriers.
Of course places that aren't served by LCCs tend to have higher, sometimes painfully high prices  What comes to mind is CO's IAH-LRD which is virtually the same distance as IAH-HRL/MFE/BRO, BUT these three are in a close proximity to Harlinegen (HRL), so the difference can be pretty significant: $350 v. $100. I believe AA does pretty much the same from DFW, though when I picked dates at random the difference wasn't quite as bad (AA does not fly to HRL, so had to go with MFE).
