My wife and I are flying to Larnaca next month from YYZ on Alitalia, but we will both be arriving into YYZ on different flights (she's on CO from CLE, I'm on DL from CVG) and we need to find the best place to meet up. Do both DL/CO arrive in the same terminal? Will we have problems at customs/immigration if we are on separate flights?

You both should arrive in terminal 3 and I would just wait at a coffee shop etc outside of immigration/customs. Whoever arrives first can then just watch the second arriving persons flight and meet them as they come out of the door from customs. Your departing flight departs from T1 (I think) so you would need to take the shuttle to your departure terminal. I cant think of any reason why you would have a problem being on different flights.

You are correct. Alitalia does fly out of Terminal 1.
In regards to the inbound flights they do land at Terminal 3 and a quick shuttle ride will get you to Terminal 1. You will need to clear customs in Canada then re-clear security when checking in for your Alitalia flight.

You won't be able to wait airside, as you will be "forced" to go through Canadian Immigration/Customs right off your flight. There are no lounges between this area and your gate, so you should pre-arrange to rendezvous landside in T3. There are several restaurants/coffee shops just behind the check-in counters, but if you both have cell phones you should be able to locate one another. Best to do this at T3 because all restaurants, coffee shops, etc. in T1 are airside.
I know AC now manages to get inbound US checked bags that are destined to overseas flights transferred without requiring they go through Canadian customs. When you each check in at your US airport, see if DL and CO can do this too. It will save the hassle of rechecking your bags at T1, even if these carriers cannot check you in for your Alitalia flight. You might want to call Alitalia to see if they are able to accept bags at YYZ transferred this way.
Otherwise, your transfer is landside from T3 to T1. There is supposed to be a monorail starting up soon, just like the transfer at ORD.
And remember on the way back, you will clear Canadian immigration and customs and will have to get your bag and take it with you to T3 where you'll preclear US Immigration and Customs after checking in, and they'll take your bag at that point. There won't be any bag transfer between terminals. Pre-clearance line-ups can be miserable at T3, but keep an eye out for the US Passport line...it generally is empty, but you can miss it among the hords of others using the regular channels.

another question not too far off this topic...
I'm connecting in YYZ en route to YVR, originating in EWR. At this point I have a scheduled 3 hr layover in YYZ. What are my chances of getting though customs and getting on an earlier flight?
I arrive at 4:55 and my scheduled departure is 8:00, but there is an earlier flight at 6:00. Would prefer to make the earlier departure if I can.

Assuming you're flying Air Canada, you will be landing in Terminal 2. You will have to wait for your bags, go through Canada Customs/Immigration, put your bags back on a belt, catch the bus to Terminal 1 (where YYZ-YVR) leaves, and re-clear security. So it will be tight to catch the 6pm (assuming even that AC will allow you to take the earlier flight without charging a fee -- what kind of fare are you flying on?)
