I'll be flying BOS-FRA-BLR on LH, leaving 12/30 or 12/31. Will those miles count for 2004 or 2005? What about other *A carriers miles posting on US? Do preferred miles accrue at the date they appear on my statement, or when the flight began/ended?

I'm GP now, with no nope of CP. My hope is that these flights will accrue for 2005.

You might be out of luck. I'm pretty sure miles post to the day you travel regardless of when they are added to your account.
