I'm looking for a cooking school in Mexico where I can learn to prepare the foods of various regions of Mexico. I see plenty on the Internet, but wondering if anyone has any personal experience with any of them?

I prefer to stay less than a week, and I don't have a preference as to the geographic location of the school. I speak Spanish fairly well, and have had lessons in Spanish before.
