Looking for great dining away from the casinos in Vegas, does it exist?

No Italian cuisine please.

Check out Chowhound.com and post all your location requests, site has some recent
posts about the areas you want to know about too.I have found the posters on that board to be the most knowledgable about local eats.

I recently saw a good review regarding a restaurant off the Vegas strip,I believe run by former employees of Emerills, give me a few days and I will find it.
When are going to be in Vegas? we will be there Nov 9/13, after 3 days in Santa Fe
and then 3 days Scottsdale/Sedona.

Going to be there this Saturday night Oct 27th.

One of my biz partners has been doing an awesome job, so I'm rewarding him w/a road trip (his request).

Playing golf in Palm Springs Sat A.M.
drive to vegas, party in vegas on Sat night,
then explore Death Valley on Sunday.

I haven't done a road trip in a car since...well....a long time ago, actually looking forward to it. (can't beat $22 luxury car rentals @ priceline).

I know it's a chain, but PF Chaing's is always a winner! Try the lettuce wraps. There is a Smith & Wollenski on the strip next to the MGM Grand, also. Haven't eaten there, but it MUST be good.
