Have a weekend in Singapore coming up in a few weeks and would like some advice on where to find a nice Sunday Champagen Brunch. Looked in the web and noticed the Fullarton and the Hyatt seemed promising. Anybody have any suggestions?

hear nothing but good things about the fullerton's (is it at town? or lighthouse?), however have not tried it for myself. i think some time back it was said that the goodwood park did great brunches too, you could check on that. let us know how it turns out.

I can highly recommend the Fullerton - been there and enjoyed the sunday brunch. If I remember correctly I paid Sin$ 75.

I was disappointed by the sunday brunch at the Ritz-Carlton Singapore.
First of all, if didn't feel like a Ritz-Carlton environment in that the restaurant was crowded, very noisy and the tables were placed very close to each other. It was definitely not a relaxing environment.
Second, service was poor. It wasn't rude, it was just very slow, and lacked the graciousness that I expect from Ritz-Carlton staff and friendliness of other top end Singapore hotels.
The food was quite good. Seafood selection was excellent.
Finally, I was surprised that they charge for iced tea. The brunch cost S$75. I thought that coffee and tea would be included in the price. Wow, was I wrong. I ordered four glasses of iced tea (I was dining by myself) and they charged me S$8 per glass.
You would think that a brunch that includes unlimited Veuve Clicquot would include iced tea, or at least free refills if they charged me for it. Well, maybe the idea of free iced tea refills is an American thing and I shouldn't expect it when I'm overseas. However, the Four Seasons Singapore included unlimited iced tea with their regular weekday breakfast buffet.
Next time I'm in Singapore, I will try the brunch at the Four Seasons.

Yeep, IMHO I would agree with jpatoka and the Singaporeans. The Grand Hyatt's Mezza 9 is definitely a decent place for Sunday Champagne brunch. I have tried most of the ones offered by big hotels and found this one to be the best for my personal taste. Four Seasons is nice too, the Ritz wasn't quite to my liking.
You have a wide selection of food there from seafood (lobster, oysters, etc.), over sushi and sashimi, to chinese and western cuisine. Free flow of Moet & Chandon Brut Imperial or another Rose champagne or red/white wine if you want that instead. Price is now S$ 88. Make sure to have reservations (2 weeks in advance should be okay) otherwise you'll be pushing your luck.
BTW, if you want to splurge you can request a Dom Perignon Brunch which basically means substituting Moet&Chandon for Dom Perignon. It is free flow too and runs at S$ 175 per person (last time I had it). Just be aware that if you are a table of two, both of you will have to choose the Dom brunch. If you are a table of four then all four have to choose the Dom, etc. You get the idea. Drink one bottle per person and you break even plus have the food for free if you care. :p
