I've got a JetsGo flight that arrives @ T3 @ 4pm on Saturday, and I need to connect to an AC flight in T2 @ 6pm... What's the quickest way inter-terminal?

I would suggest you take you luggage and take the inter terminal shuttle. I believe they leave from the departure level..

Once you have collected your baggage, and gone through customs, look for a staircase. Go upstairs and look for the inter-terminal. It's a blue bus, with LINK written on it. Take the one to Terminal 2, and it drops you off at departures.
