I'm thinking about doing this. Does anyone know if there is any decent skiing without having to take the chair lift? Also, how far is this from Vancouver (by Stanley Park) and how much does it cost? Thanks!

It's a bit more expensive due to having to take the aerial tram to the top. It's only 8 kms or so from Stanley Park but be aware that there are traffic issues headed across the Lions Gate bridge that could extend travel time significantly.

If you want better XC at lower prices, you could try twpo provincial parks pretty much adjacent to Grouse, Cypress (http://wlapwww.gov.bc.ca/bcparks/explore/parkpgs/cypress.htm) which isn't any further away driving time wise, or Mt. Seymour (http://wlapwww.gov.bc.ca/bcparks/explore/parkpgs/mtseymou.htm) which is a little bit further away.
