My wife and I obtained free tickets by allowing ourselves to be bumped and rescheduled. Do we get FF credit (and miles toward preferred) on the flight we use with these tickets?

Sorry but no.

If you're using the round trip flight credit vouchers given as bump compensation - no. Under the old fare codes, the voucher tickets were booked in Z class, and were not eligible for miles and could not be upgraded. Of course, tickets booked with a voucher with a cash value do accrue mileage (normal and preferred miles) and are eligible for upgrades.
