AC Signup - online vs. in club?
The person/club you sign up with gets credit for signing you up and when I had no status and signed up they gave me a $50 discount that I couldn't find online,
If its a regular club you visit, do it there. They get credit and are even more likely to remember you. As others have said, they can find discounts and even print a receipt (looks better than an email) if you are using shared clubs (like AS) until your card arrives. I would build the relationship. You can also use miles at the club too.

Yes, it DOES matter. If you have a favorite club, try to renew at that location (or by contacting the club directly, if you have the means). It does help the smaller clubs if they can show the revenue associated with their locations.
I make the effort to call my favorite AAngel at the HNL club every year in December. In addition to having a wonderful conversation with one of my favorite AA employees, I also help out this mid-Pacific club. Win-win!

Yes, it does matter but more than for the hope of a discount.
There is also the angle of renewing or signing up at a club that really could use the business. Strong renewals and sign-ups look good for a club.
A while ago I asked this of an AAngel that I knew well at one club. She said that, yes, it does matter a bit, but it's really minor, and has very little real impact on anything. She suggested doing whichever was more convenient for me since the significance of doing it in the club was, basically, minuscule.
I used to renew at LIM, and then the club closed down. I started renewing at SJC since there is no AC at my home airport (MCO), and they too closed down. This year I renewed at IAD and then they also closed. With that record, I'm afraid they will talk me into renewing online instead of at an AC .
I had the DFW AC call the AUS AC club for me. She called and said you have a very loyal customer who would like to renew with you. It made both of their days and I was remembered when I walked in 2 weeks later to AUS. I saved an additional $25. Especially valuable at the end of month as they have targets to hit monthly.
