which airport is the best place to transit and why?

An airport is an airport. If you are EXP (which apparently you don't want us to know) some airports are better than others, but you don't want to have that info (otherwise you would list your status in your profile).

If you are interested in flying AA, go with LAX to get the 777 all the way and access to the Flagship Lounge if you are OW Emerald or flying First Class. ORD also has a Flagship lounge, but its pretty dull even compared to the LAX FL. I've taken the HND flight from JFK and it too is a good option if you'd like to leave in the evening and can get to Tokyo late in the evening (next day).
Of course, the best way to travel to Japan is JL F, NH F or SQ suites.

I'd say LAX or even DFW over JFK (HND) or ORD particularly in winter. The LAX flight would allow more of a half way break. Again, what is the OP looking for in the way of lounges or a/c and seating on the a/c.
During the colder months, I would transit at LAX for all the reasons above plus avoiding ice and snow storms at DFW, ORD and JFK. Winter rains can cause delays at LAX, but not like the cancellations at the others. I even prefer the Admirals Club at LAX, when I am not an intl pax, as you can always find a quiet hideaway somewhere in the maze.

In the sense that is more halfway than the other options. JFK to HND is what about 13-14 hours. That is a very long time to be in a small metal tube even more so if sitting in a cramped Y seat.

ORD is the lowest time in the air, LAX is the longest. Class of service would drive my selection of route.
