Could someone explain this process to me? I get the gist of it, but would be nice to know 200%. I'm just a normal, typical aeroplan flyer, trying to get in on this whole shizzam :P

If someone else is traveling on the same flight(s) as yours, and they are willing to sponsor you an upgrade as a companion with their upgrade certs, you can request an upgrade from Air Canada on the website, via phone, or at the gate. First you need to know what kind of upgrade(s) do you need.
There are 3 kinds of upgrade, Special System Wide Upgrade(SSWU), System Wide Upgrade(SWU), and North America Upgrade(NAU).
SSWU is for booking codes Y,M,U,B,H,V,Q,L,A,S. You can request an upgrade anytime for booking codes Y,M,U. You can request an upgrade within 7 days if the sponsor is Super Elite or within 4 days if the sponsor is Elite for booking codes B,H,V,Q,L,A,S.
SWU is for booking codes Y,M,U. You can request an upgrade anytime.
NAU is for booking codes Y,M,U and flights within North America. You can also request an upgrade anytime.

How might I find out my upgrade code? If my online ticket says "Fare: latitude A", then would A be my upgrade code? Sorry for all these questions, if they've been answered already it'd be great if someone could link me
Thanks everyone!

There's no such thing as "upgrade code" on your ticket, there's only a "booking class/fare code". If it says latitude on your ticket, it must be either Y,M, or U. Not sure about the "A" after it. International Latitude fares, which are booking class/fare code Y,M,U, can request an upgrade with both SWU and SSWU. You can request an upgrade anytime prior the departure, regardless the status of the sponsor (Prestige can also sponsor you with an SWU).
For Example, on the acupgrades page, you could type in the following:
Feb. 11, YVR->PVG, AC 25, Hydrus, Your Status, SWU/SSWU
and so on.
Wasn't quite sure how to add this to the wiki section for looking for upgrades so figured I'd post here..if anyone is feeling extra kind (and has a SSWU to spare), I'm traveling from YVR-YYC-YYZ on Feb/18 - flight #s AC212 & AC130. Not super long flights but hey I figure it's always worth asking!
