Thompson Aero Seating (Portadown) seating
Launched March 15, 2015; installed in all EI A330 aircraft.

Yeah, they did say a couple of years ago that the demand for Premium Cabin space outstripped supply so they would be taking steps to increase the supply...

From what Thompson Aero says in the press release on their website, the first ship should be going in to get fitted in December and the last one should be completed in March:

Right now all A330s aircraft have 24 business seats for a total of 168. This means there will be a gain of 21 seats fleet wide. If the video of the A330-300 on the Aer Lingus website it to be believed, the A330-300 will have 30 seats leaving the A330-200 with only 23 seats each.

Alot can happen between now and March. I wouldn't take those tweets as ultimate confirmation that the A330s will all be completed by March. They pointedly ignored the request to confirm completion by March, instead focusing only on the aircraft type in the final tweet.
Which is not to say that it won't happen by then - but those tweets in no way should be taken as confirmation that all A330s will be reconverted by the end of March.

Any updates on this, on when the first of the new aircraft will be fitted?
I got an invitation from EI last week to go and take a look at a mock-up of the new seats down in Palo Alto. (Palo Alto is in Silicon Valley about 20 minutes/miles south of SFO for those not from the Bay Area). It is invitation only and they are being pretty strict. I asked if i could bring a guest and they said I could not as space was very limited.
I will find out at the event what their expected dates are and report back. Sounds like they are really pushing the boat out and are serious about poaching business class travelers from some of the big guns if they are hosting this at the Four Seasons.

From what I can make out this is the current situation;
EI-DUO - is re-fitted and starting flights as of 15th February.
EI-EAV - is re-fitted and as of right now is flying back from the re-fit to DUB to re-position for service.
EI-DUZ - is currently on it's way to begin re-fitting.
Turn around time is around a month(?) by the looks of things. I may be wrong though?
