Urrr, only if the mass/main lines allow BYOB (beers, generallly no - wines, corkage fees) unless you attempt the "runners" route & risk being summoned to the naughty room below deck after embarkation - best to check line's website for specific policies & fees. Some will buy duty fees & at ports of calls - USVI comes to mind - and ship security will embargo them until the last evening, which sometimes resulted in midnight parties. Getting ice isn't a problem but you still need the mixers.

You can bring sealed bottled water & soda for consumption, subject to inspection in carryons (coolers) or as checked luggage, wrap & tape and slap a luggage tag or two on it.

The unlimited, all-you-can drink package is good for generic/house brand, in other words: non-premium brands stocked on the ship - no Remy XO, etc. A week's worth of unlimited soda for adults is now around $50 USD w. service charges auto-calculated already ...
