Wow what a trip, quite often do LON-AMS go out Saturday, return Sunday -it's a working weekend and we go to Utrecht.......on the train. I totally agree how confusing it is, all summer there has been no direct service -once changed at Amsterdam Centraal very confusing station -best to avoid the train ticket machines at Schiphol and go straight to the ticket office -never ever got any of my cards to work in them..

Schiphol lounge is my most favourite lounge (not that I've been to many )
The 'Lounge Guy' that I have encountered on several occasions may well be the one you mentioned as we always get the last flight back - nice touch to call you for your flights, mind you we normally need it !!
