One would have to be mentally unbalanced rather than simply disgruntled to do something like this. The article also mentioned that:
"U.S. authorities, meanwhile, launched an investigation after a number of needles were found aboard four Delta Air Lines flights from Amsterdam, The Associated Press reported earlier this month.
Those sandwiches were believed to have originated in Gate Gourmet's Amsterdam kitchen, and were to be served to business class passengers on Delta flights, according to that report."
