Hi Jason,
We spent 5 days in Seoul last Fall on our way to Thailand - there is plenty to see and do. For most of it you will not need a guide. Navigating the city by public transportation is easy, and all of the major sights have good English signage - many have the option of an audio tour as well.
The one exception we made was a private guide for a night dining tour - a fantastic opportunity to go out at night and eat where the locals eat.
